Sweet Potato Brownies

Soft, fudgy melt in your mouth Vegan brownies all with clean ingredients!



This recipe is a favorite in our office! They are a huge hit!



Sweet Potato Brownies (Vegan)


3/4 Cup Cacao powder, (organic)

1 Cup Sweet potato (cooked and mashed)

2 Tbsp.'s Maple Syrup

1/2 Cup Nut or coconut butter

1 Tsp. Apple cider vinegar (with mothers)

1/2 Tsp. Baking soda

1 Tsp. Cinnamon

1 Tsp. Vanilla extract

1/2 Tsp. Sea salt

2/3 Cup Coconut or cassava flour

3 Tbsp.s Coconut oil, melted

2 Tbsp.s Walnuts or flaxseeds (optional)

(flaxseed option; mix with 1/3 cup of water, sit for 5-7 minutes)





Directions


  1. Preheat oven to 375 F

  2. 1 Tbsp of coconut oil to grease 8x8 glass cooking dish

  3. Puree mashed sweet potato with food processor or emersion blender

  4. Add in cacao powder, nut/coconut butter, 2 tbsp.'s of coconut oil, flaxseeds/walnuts, coconut/cassava flour, maple syrup, vinegar, baking soda, cinnamon, vanilla extract and sea salt. Blend until smooth

  5. Pour batter into glass dish and place in the oven

  6. Bake for 35-40 minutes or until toothpick/fork comes out clean

  7. Let cool and enjoy!
